Ingredients:
- 1 lb. each
WHITE & DARK Chocolate
Choose either
- V125 Couverture Chocolate (tempering required)
- Bada Bing Bada Boom Candy Melts (no tempering)
- Peppermint Chocolate Flavoring Oil
- 6 - 8 oz. crushed peppermint candy (red & white mints or candy canes)
- 6 tablespoons whipping cream
You'll also want:
Method:
| 1. | Melt or temper the WHITE chocolate using instructions
that came with your chocolate. Ideally, use a double boiler
(or a
double boiler
insert). Do not let the water touch the bottom
of the double boiler. Only let the water simmer. Do not allow
it to boil or you may burn the chocolate. |
| 2. | Stir in half of the crushed candy and peppermint flavoring oil (use the eye dropper that came with your oil - it's very concentrated). |
| 3. | Pour mixture into a waxed paper coated baking sheet or styrofoam plates or any other container that will allow you to easily release the chocolate. |
| 4. | Spread with spatula or simply keep turning the plate until you have an even layer of chocolate. |
| 5. | Sprinkle with the remainder of the crushed candy. |
| 6. | Refrigerate until set - about 20 minutes. |
| 7. | Melt dark chocolate with whipping cream. It just barely needs to melt. |
| 8. | Remove from heat and let it cool for 5-10 minutes. |
| 9. | Pour dark mixture over white chocolate in a design or a thin layer. OPTIONAL: Repeat process with white chocolate & peppermint candy for an additional layer - but if you do that, you might want to make the first layer THIN so that you have three thin layers! |
| 10. | Refrigerate for about 15 minutes until set.
Break up into pieces of whatever size you want before serving. |
